Italy for the Gourmet Traveler, Revised



This book is probably the best Italian food book for the traveler I have seen. It's also the biggest travel food book I've seen, and the heaviest. But that's the only drawback as far as I can see. I'll either just tear out the parts relating to where I'm going, or copy them at home on my scanner. But the food and wine descriptions, generally, and by regions, are very well-written and useful. We've been eating Italian food in Italy and cooking it at home for decades, and Fred Plotkin's writing not only confirms lots of what I know, but describes things I sort-of knew about Italian food but hadn't really articulated. The other thing I really appreciate is that his restaurant recommendations don't just send you to trendy expensive restaurants, but to the real deal in Italian cuisine, often at modest prices. I appreciate that not just from an economic standpoint but because I don't go to restaurants in Italy to be trendy but to enjoy the real food. I've already recommended it to several friends.

The recipes here are not all that exciting and do not start with original ingredients (ie. cream, mushrooms, flour instead of cream of mushroom soup). There are so many "Gluten Free" cookbooks available today that offer gluten free versions of just about anything you might want to cook and eat..but most are just regurgitated standard recipes, who needs a gluten free version of something that is naturally gluten free anyway..it's a big waste of money. NOW, BAKING is a totally different story...this does require completely different recipes.br /br /To bake successfully without using Gluten laden flour requires tossing out a standard recipe almost completely and finding a mixture of several other ingredients to achieve the resulting effect of just the ONE missing component, not easily done for us standard cooks.br /br /Baking isn't like cooking...it requires more exacting measurements to produce an edible product. Yuck, have you ever baked a recipe and left out an ingredient by accident? Yup, forgetting that ONE little thing...gave rise to a hockey puck instead of a fluffy biscuit. br /br /After reading alot of the reviews about the recipes in the cookbook I am left to surmise that there are alot of people either not reading the recipes correctly or just not bothering to follow them at all....you WILL get a gummy product if you dump an entire packet of gelatin into ONE batch of bread, your yeast won't respond as well to liquid that isn't warm enough, and adding more of one ingredient when you run out of the one you need won't yield the same results. "rolls eyes"br /br /To blame the cookbook or author for one's own inability to put together a recipe is kind of lame...sounds more like a case of blatant stupidity if you ask me. br /br /I have all Ms. Hagman's books, as well as just about every other Gluten Free cookbook available(so, listen, I have a thing for cookbooks, get over it). Most of the other cookbook's have baking recipes that rely on a cheaper more granular rice flour, which gives your finished baked goods that "horrid fall apart-y commercially produced Gluten Free Bread quality" that sent us running for better home baked alternatives in the first place. What's the point of going through all that work for a poor quality bread? eh, might as well go without. br /br /Ms. Hagman has done the hardest part for us, she has already tested and refined these recipes over the years and was generous enough to share them with us, a little appreciation wouldn't be out of order people.br /br /I eat just as well on a Gluten Free diet as I did before I was diagnosed, with the help of cookbooks like this one of course and I would definately like to say adding this book has helped so much in my quest for good food. Sticking to a Gluten Free diet doesn't have to be like being slapped with a life sentance filled with tasteless low quality food "alternatives". br /br /Seriously, the SPRINGY CORN BREAD recipe changed my life. It is the most outstanding corn bread recipe, bar none, I have ever eaten.br /br /Grab this book.... and Get off your butt and BAKE something already!!br /br /

The Gourmet's Guide to Cooking with Wine



This book could be labeled enchanting. Absolutely enchanting. Cooking with wine is a nice technique for adding flavor to one's dishes. I use it pretty often, from my old dinner party standby, Beef bourguignon, to my wife's family recipe for spaghetti sauce (or, as they refer to it, "gravy"). This book expands my wine cooking horizons considerably.br /br /The book begins with a warning from Julia Child: "If you put rot-gut in, you'll get rut-gut out." Only use wine in a recipe that you would drink yourself! The author notes that (Page 6) ". . .a nice wine will only enhance a dish, such as in a sauce whose flavors are intensified through reduction."br /br /Some of the recipes in here I have made before, such as Beef Bourguignon, Coq au vin, Coquilles Saint Jacques, Chicken Piccata, and so on. But the recipes of these tried and true dishes are different enough from mine that I can experiment.br /br /The book proceeds as follows:br /br /Introduction. Here, we get a brief essay on cooking with wine, a listing of wines that are good for cooking, and how long it takes alcohol from the wine to burn off.br /br /Appetizers and soups. Here are some nice examples of wine with appetizers and soups. Chablis Vichyssoise: An old favorite, Vichyssoise, gets some new life with two cups of Chablis. Or French Onion Soup Chardonnay. I don't much enjoy Chardonnay, but I can see how this would add a nice taste to French Onion Soup. Indeed, this recipe is different from the one that I have used, and "Vive la difference!" Then there is a recipe for a salad dressing, featuring 1/4 cup of sherry (Allison's House Dressing).br /br /The Great European Classics. Here, we see a series of classic recipes and their use of wine. Already mentioned, Beef Bourguignon, Coquilles Saint Jacques, Coq au Vin (with white wine instead of red; an interesting change of pace). Other interesting classics mentioned in this section: Veal Marsala and Veal Oscar.br /br /Beef, Veal, Pork, and Lamb. I enjoy Steak Diane a great deal. I have not made it in the past; I note that there is an array of recipes available. Here is a nice variation. The wine used? Madeira. Also, cognac (or brandy). I've tended to use a meatloaf recipe from "Joy of Cooking," but the one in this book will be my next meatloaf effort--Mom's Madeira Meatloaf with Cremini Gravy. The meatloaf has standard ingredients--plus the Madeira. The gravy features cremini or portobello mushrooms with, you guessed it, more Madeira.br /br /There follows sections on Poultry, Seafood, Pasta, Side dishes, and Brunch.br /br /Great pictures of the dishes. The instructions, for the most part, are straightforward. A good concept lies at the heart of this volume and that concept is executed well.br /

Wokking Your Way to Low Fat Cooking



My husband and I never choose to eat at Chinese restaurants any more. Why? We've been too spoiled by this book! Why go out to eat when we can have better food at home?p"Wokking Your Way to Low Fat Cooking" changed my cooking style and our taste buds forever. The fried rice, chow mein and other dishes served in restaurants now seem too greasy and boring, heavy in calories and unnecessary additives. We've gotten too used to the fantastic flavor and less fat in Norma Chang's creative and healthy cuisine. I use her book at least once a week, if not more. It is my constant companion in the kitchen. Even if I am not cooking directly from her book, I have adapted the author's methods and helpful tips to other recipes. After reading "Wokking Your Way", I've never cooked the same again. p"Wokking Your Way" recipes are not only easy to prepare but also nutritious and delicious. The directions clearly state each step and include variations to add simple spice to any dish. Most ingredients can be bought at a regular grocery store. A wok is not even necessary. I've used non-stick skillets instead.pDuring my postpartum days, adjusting to life with a newborn, I often made Sweet and Sour Fish or Bay Scallops with Green Peas, dishes that contain lots of protein and vitamin-rich vegetables but can be cooked in just minutes. If I have a busy evening planned, then I do what the author suggests: marinate the meat and slice the vegetables the night before. The next day, dinner can be finished in less time than the rice cooker needs to make the rice. So easy and "yummy" (as my toddler daughter now says)!pThe book also contains many other well-loved recipes, including plenty of ideas for salmon (my favorite), a creative Crispy Apricot Chicken, Beef with Spinach Soup, Sesame Noodles, and, a favorite fall dessert: Autumn Fruits with Honey and Lime. pFriends often ask me for my recipes. I tell them what a wonderful cookbook "Wokking Your Way to Low Fat Cooking" is. Campfire Cuisine: Gourmet Recipes for the Great Outdoors



I am a BIG collector of cook books, plus my husband and I have an RV. We are also seasonal campers at a local campground along the Susquehanna River in Pennsylvania on the weekends. We "camp" with a group of friends and have "theme" cookouts on the weekends. We attract many other campers at dinner time on Saturday nights because they are all curious about what we are going to cook that night. This little gem of a cookbook is perfect for us! We've tried some of the recipes and loved them, now we are taking each little sweet chapter and trying something different each weekend that's left this summer. And don't think when the summer is over so is camping...we camp until mid October. Some of us are also Penn State tailgaters and these recipes are just great for that type of venue! It was one of the best "little surprises" I've ever had in a cookbook. The funny thing is, I purchased this cookbook as a gift for someone and I liked it so much, I kept it for myself.
